Ingredients:
1 tsp Khanum Cumin
½ tsp Khanum Garam Masala
1 Medium Onion chopped.
3 Cloves of Garlic crushed.
3 Medium Potatoes
200g Spinach
Cooking Oil
Prep:
- Pluck the spinach leaves and roughly chop. Wash the spinach (Drain and wash a few times) Leave to drain for 10 minutes to remove any water from the leaves.
- Peel your potatoes and cube them (approx. ¾ inch) Add them to a bowl of water and keep them to one side.
- Peel and roughly dice your onion. Peel and crush the Garlic cloves and leave to one side.
Method:
- Heat a drizzle of oil in a nonstick pan. Add your Garlic & Khanum Cumin powder to the pan. Cook for 1-2 mins. You can also add some fresh chilli sliced as an option.
- Add onions to the pan and cook until softened.
- Drain the potatoes and add to the pan. Stir and cook for 3- 4 mins. Pour 4 tbsp of water and mix well.
- Cover the pan with a lid and leave to cook until the potatoes are cooked. The potatoes should be soft enough for a fork to go through but not mushy.
- Sprinkle a pinch of salt for seasoning & Garam Masala. Sauté for 2-3 mins.
- Add the spinach and stir fry on a high flame for 3-4 mins.
- Mix well and serve.
