A delicious breakfast or even a dessert, these coconut pancakes are a vegan friendly alternative. Not Vegan but fancy trying the recipe? We also have an optional icing you can serve alongside these Khanum Coconut Pancakes.
Ingredients:
Pancakes
156g All-purpose flour
3 tbsp Coconut sugar
1 tbsp Baking Powder
¼ tsp Salt
180ml Coconut Milk
120ml Water
1 tsp Vanilla Extract
2 tbsp Khanum Coconut Oil
Icing (optional)
400g Powdered Sugar
½ tsp Vanilla Extract
2 tbsp Milk
Method:
Pancakes
- Sift the flour into a mixing bowl and add the coconut sugar, baking powder and salt. Mix together.
- Add the coconut milk, water, vanilla extract and whisk to remove any large lumps.
- Heat a frying pan with a little of the Khanum Coconut Oil, when the pan is hot add some mixture to the pan. (around 4 tbsp)
- When bubbles appear on the surface flip the pancake, cook until both sides are browned. Place on a plate and cover to keep warm. Continue this step for the rest of the batter mix.
Icing (optional)
- In a mixing bowl add all the ingredients and whisk until smooth. The icing will start to stiffen if you do not use it immediately.
Serve the pancakes and add a drizzle of icing on top to serve. Have some dried coconut flakes? Why not add some to garnish.
