Meethe Chawal or ‘Sweet Rice’ is a dessert prepared and enjoyed during celebrations. With fragrant flavours and full of fruits and nuts, this is a must try recipe.
Ingredients:
- 5 ½ tbsp of Khanum Pure Ghee
- 2 Khanum Caradamom Pods
- 8 Cashew halved
- 5 Almonds Chopped
- 2 tsp Raisons
- 2 tsp Dry Coconut
- 4 Cloves
- ¼ tap Saffron
- ¼ tsp Orange food colouring (optional)
- 125g Golden Swan Long Grain Rice
- 100g Sugar
Prep:
- Soak Golden Swan Long Grain rice for 30 mins before cooking.
Method:
- Add 2 tbsp of Khanum Ghee, Cashews, almonds, raisons and coconut to a large Wok or non-stick pan on a low heat until golden brown. Place in a bowl and set aside.
- Add the remaining Khanum Ghee with the Khanum Cardamon pods and cloves. Add 250ml of water, saffron & food colouring (if using). Mix well.
- Add the soaked Golden Swan rice to the pan and mix well. Cover and leave on a medium heat for 10 minutes.
- Mix the rice gently and add the sugar, 2 tbsp of Khanum Ghee until the sugar has dissolved.
- Re-cover the pot and cook for another 5 minutes, occasionally stirring to prevent burning the rice.
- Serve with a few chopped nuts as a garnish.
